For the hollandaise sauce: blend egg yolks, lemon juice, and Beaver Brand Deli Mustard in a blender on high. Slowly add the hot butter until the sauce thickens (which should happen quickly). Set aside. Tip: to keep the sauce warm, transfer into a glass bowl and place in warm water until ready for use.
Fry the bacon and remove it from the pan.
Fry the egg in the bacon grease until desired done-ness.
Coat one side of each piece of toast with Beaver Brand Deli Mustard. Build your sandwich with avocado, tomato, Swiss cheese, bacon, ham, fried egg, and top with hollandaise sauce and the second piece of toast.
